1. Water
When making tea it is suggested to use soft water or temporary hard water. In natural environment snow and rain waters belong to soft water; and waters from spring, streams and rivers are temporary hard waters, part of underground water is temporary hard water as well. Distilled water is an artificial soft water.
2. Tea Quantity
When making green and black teas, suggested ratio is 3 grams of leaves per cup; add 150-200ml boiling water. As for Pu'er tea and Oolong tea the ratio is 5-10 grams of leaves per cup. When preparing tea with clay teapots, the ratio is about the half of the pot volume or even more.
3. Water Temperature
To steep, please use freshly drawn boiling water in order to draw the best flavor out of tea. When preparing black, Oolong and Pu'er teas please use boiling water (100C, 212F). And it's important to use cooler (80C, 180F) water when steeping green tea.
